Tiramisú: Alberto’s favorite

tiramisu.jpgApril 19th is approaching… and it is my brother Alberto’s birthday.You don’t know what gift he would love to receive? Do you want to impress him with something special?Well, I’m here to help you all… His favorite dessert is something typical Italian: Tiramisu’. Now I will tell you the secret about how to make a perfect Tiramisu’ for my brother.Ingredients for 6:

  • 4 eggs (better if organic, and grade AA, because my brother deserves the best!)
  • 2 cups of espresso coffee (use Illy coffee)
  • 1 pound of savoiardi (typical Italian cookies)
  • 1 pound of mascarpone cheese (it’s a kind of cream cheese, but different! So, please, use the real mascarpone cheese and not something else that you think could be the same, because it’s not! Trust me)
  • 3 and a half ounces of sugar
  • a pinch of salt
  • 2 ounces of cocoa powder (of good quality!)

Directions:

  1. Separate yolks from whites of the eggs.
  2. Mix yolks with sugar until you get a soft batter.
  3. Add the mascarpone cheese to the yolks and mix until there are no more mascarpone crumbs.
  4. Beat the egg whites with a pinch of salt until they are firm and soft.
  5. Add the egg whites to the batter and mix gently.
  6. Put a layer of savoiardi in a rectangular bowl and sprinkle it with your coffee.
  7. Cover your savoiardi with the mascarpone batter and continue making layers until you finish all the ingredients (the last layer has to be the mascarpone batter).
  8. Add your cocoa powder on the top of your Tiramisu’. Refrigerate for some hours before serving.

Dear Sara,

I believe that the equivalent of Savoiardi in the States is something called “Lady Fingers”, unfortunately they are often smaller than the Italian “Savoiardi”, but consisntecy is similar enough and are easier to find. I am writing to ask you when will you post the Crostata’s recipe, the one you made when I visit you and Damian, it was really nice :)
