Stuffed zucchini
This is an easy appetizer that can be also made some hour in advance and then warmed up in the oven. It is a recipe from my friend Luisa and I can assure it is very good.
Stuffed zucchini recipe
Ingredients for 4:
- 4 or 5 zucchini
- 1 egg
- salt
- pepper
- a small can of tuna
- 1 tablespoon of grated Parmesan cheese
Directions:
- Preheat the oven at 350F.
- Cook the zucchini in boiling water for 3 minutes.
- Cut zucchini lenghtwise and with the help of a spoon dig the pulp out (the shape of the zucchini should resemble a boat).
- In a separate bowl mix tuna (previously blended) with egg, salt, pepper, Parmesan cheese and the pulp of the zucchini.
- Fill the halves of the zucchini up with the tuna mixture.
- Cook in the oven for 1 hour.
