Stuffed zucchini

This is an easy appetizer that can be also made some hour in advance and then warmed up in the oven. It is a recipe from my friend Luisa and I can assure it is very good.


Stuffed zucchini recipe

Ingredients for 4:

  • 4 or 5 zucchini
  • 1 egg
  • salt
  • pepper
  • a small can of tuna
  • 1 tablespoon of grated Parmesan cheese

Directions:

  1. Preheat the oven at 350F.
  2. Cook the zucchini in boiling water for 3 minutes.
  3. Cut zucchini lenghtwise and with the help of a spoon dig the pulp out (the shape of the zucchini should resemble a boat).
  4. In a separate bowl mix tuna (previously blended) with egg, salt, pepper, Parmesan cheese and the pulp of the zucchini.
  5. Fill the halves of the zucchini up with the tuna mixture.
  6. Cook in the oven for 1 hour.
