Debba’s granatina
My friend Debba had her birthday a few days ago and in her honor I would like to write about her best recipe. Everyone that knows Debba has (sooner or later) tried her “granatina”. It is a cake made of chocolate and it is a little bit less soft than a mousse.
Granatina recipe
Ingredients:
- 18 ounces of dark chocolate
- 3 gelatin sheets (or 1 envelope of gelatin powder)
- 2 cups of milk
- 4 cups of heavy cream
- rum
- Pavesini cookies (optional)
Directions:
- While melting the gelatin in cold water, whip the heavy cream.
- Melt chocolate using a bain-marie pan.
- Mix chocolate with the whipped cream.
- Cook the gelatin for a few minutes with some rum.
- Add the gelatin to the chocolate-cream mixture, mixing very well.
- Cover the bottom and the edges of a rectangular pan with the Pavesini cookies after dipping them in a mixture made of milk and rum.
- Pour the chocolate and the other ingredients into the rectangular pan.
- Cover with another layer of Pavesini cookies.
- Put the cake in the fridge for the entire night.
