Pork with peaches
A few days ago I bought some really good peaches and I used some of them for a fruit salad. What could I do with the other peaches? I thought it could be a good idea to use it to cook some pork (I know that pork with apples is really good, so why not peaches?). This is a cooking experiment that I made with what I found in my fridge (today I did not want to go to the supermarket, so I had to use my creativity).
Pork with peaches
Ingredients for 6:
- 6 thin slices of pork loin
- 2 peaches (peeled and cut in small pieces)
- 6 slices of bacon (if you have Italian bacon it’s even better)
- 1 tablespoon of butter
- 1/2 teaspoon of brown sugar
- 1 tablespoon of olive oil
- salt
- pepper
Directions:
- Sautee the peaches with butter and brown sugar (it gives a nice caramelization to the peaches).
- In another pan, sautee the pork with the olive oil till the pork reaches the internal temperature of 160F (be careful to measure the temperature of the pork.
- Fill the pork with peaches, bacon, salt and pepper and cook it for a few more minutes.
