This is an easy appetizer that can be also made some hour in advance and then warmed up in the oven. It is a recipe from my friend Luisa and I can assure it is very good.

Eggplants are my favorite vegetables.

I know it seems a strange combination: Prosciutto (from Parma or San Daniele, of course!!!) and melon? How can it be possible? But if you try it… you will find it’s a perfect combination.
